Chef’s note: Bison is lean and tasty. However, you may use any lean ground meat. Beef venison, and elk are all good choices.
{ Traditional Meatloaf }
Serves 3–4
Ingredients
1 Tbsp coconut oil or tallow
1½ lbs lean ground beef, bison, or elk
1 cup almond milk
¼ tsp dried sage
½ tsp salt
½ tsp dry mustard
¼ tsp fresh ground pepper
2 garlic cloves, minced
1 small onion, finely chopped
½ cup cabbage, chopped
1 cup Paleo Barbecue Sauce (page 233)
Preparation
Preheat oven to 350° F.
Combine all ingredients except barbecue sauce in large bowl, and mix well to combine.
Place mixture into ungreased loaf pan or shape into loaf on ungreased rimmed baking sheet.
Bake, uncovered, for about one hour. When internal temperature reaches 140°F (measure thickest part of loaf), pour barbecue sauce over top of meatloaf and return it to oven for another 15–20 minutes of bake time. Sauce will caramelize a little, and meatloaf will finish cooking through.
Remove meatloaf from oven and let it rest for 10 minutes to allow juices to redistribute. Slice and serve warm.
